Inspired by Meredith who is hosting this awesome link-up. We didn't have any chocolate chips, or even an substitutes, in the house this week (I know! But I used the last lot making s'mores popcorn, so sorry I'm not sorry!) so I browsed Pinterest for another option, enter cranberry lemon cookies. I substituted the fresh cranberries for dried, and they're pretty good, though probably not as juicy or sweet as fresh. However. Ohmygosh, they're delicious. Wonderfully soft and almost cake-like, they made quite thick cookies as they didn't flatten very much in the oven. I found it better to flatten the balls slightly with my hands before putting them onto the baking tray. Daniel took a ridiculously long nap today, so I prepared all the ingredients (my house smelt amazing, the lemon zest must have done it!) but we didn't have time to make them before heading to my parents' for dinner, so we did it instead of having a bath instead! Cheeky! Colin gave Joshua a bath so Daniel and I had some one-on-one time, which was really lovely. He gets so excited about making cookies now, I'm loving creating these memories with him! I may have told him he could have one for breakfast too, shh!
